Roast Balsamic Beetroot and Onion

Serves 6 (as accompaniment)

Cooking time: 60 minutes

This is an ideal dish to sever alongside my Marinated Roast Beef recipe (from 'The heart of the home'). See the video below which features the beautiful colours of these two dishes.


6 small beetroot, scrubbed and cut into quarters
4 small red onions, base intact, cut into quarters
2 tablespoons balsamic vinegar
Zest and juice ½ orange
2 tablespoons brown sugar
2 tablespoons olive oil
1 tablespoon thyme
Ground black pepper
Sea salt flakes

Preheat oven to 180°C.

Cut beetroot and red onions into quarters.

Combine vinegar, juice, zest, oil, thyme and  pepper. Toss through with beetroot and onion in a baking dish. 

Bake for about one hour. 

Remove from oven and sprinkle with parsley and drizzle with olive oil. Season with salt and pepper.
